Situated at the back of a sleepy alley 10 minutes’ walk from Kyoto station, HIBI COFFEE is a coffee shop all about bringing “delicious coffee to peoples’ every day.” One of the greatest aspects of HIBI COFFEE is their own small-scale in-store roaster. With this they roast new beans every day and make their other defining feature; their delicouslly smooth specialty coffee. HIBI COFFEE also care a lot about the aromas and flavors of freshly poured coffee, so pay particular attention to the freshness of their beans. “Coffee originally comes from the coffee cherry, so just like any other ingredient, it only makes sense that fresher means better” – Owner Chihara. While HIBI COFFEE may not offer anything too novel or over the top, they keep to their roots and offer refined, simply delicious coffee that you’ll be wanting to drink every day. HIBI COFFEE are all about serving great coffee to great coffee lovers, so purposely keep their menu simple, only serving coffee and food that go with those coffees. We recommend HIBI COFFEE to both those who simply love a good cup of coffee and those who have really sunk their teeth into the vast world of coffee.

The HIBI BLEND is a smooth, medium to dark roast coffee. This coffee is easy to drink with a good balance of acidity, sweetness, and bitterness. The HIBI BLEND is recommended to anyone who can’t decide what to order when first coming here. Quite possibly the result of the fresh, daily roasted beans; this coffee features wonderfully clear and smooth flavors that make the coffee incredibly easy to drink. We highly urge, especially those who usually drink their coffee with milk and sugar, to first try the coffee black and fully take in the flavors and aromas of the coffee.

HIBI COFFEE’s lattes are made with espresso from HIBI BLEND beans. The lattes are all topped with beautiful latte art, to let you know you’re in for a good cup of coffee. As you sip the latte, you’ll notice the balance of flavorful espresso and creamy milk. The combination gives the latte rich, milky flavors, while not weighing it down and taking away from its drinkability. HIBI’s lattes are so good you’ll be wondering what kind of weirdly high-end milk they’ve snuck into their steaming pitcher. This latte showcases the best aspects of HIBI COFFEE and is of a quality few have managed to pull off in Kyoto.

HIBI COFFEE’s Citrus Coffee Squash is something you’ll have a hard time finding anywhere else. Born out of the simple idea of making “something no one has even thought of,” this coffee squash is exactly that, a drink with a flavor combination no one had even thought of making. Inside this unique drink is a refreshing, yet slightly bitter non-alcoholic orange syrup. The flavors of the orange syrup and the acidity of the Ethiopian coffee go together absolutely exquisitely. While you still get a sense of the aromas and flavors of the coffee, the refreshing acidity and sweetness of the orange is overall much stronger, making this drink perfect for who aren’t big fans of coffee but are still looking for something tasty to drink. We tried the Ethiopia x Orange coffee squash, but HIBI COFFEE also serve a Kenya x Grapefruit coffee squash as well, so if you have the opportunity, why not give both a try?

HIBI COFFEE’s French toast is a thick piece of maple syrup, and honey-drenched toast, topped with a heaping big scoop of vanilla ice cream. At first, HIBI didn’t use any honey, but after much noise from overseas customers, decided to include it and make their French toast into what it is today. The addition of honey gives the toast a fantastic level of sweetness that contrasts beautifully with the bitterness of coffee. The toast is served piping hot and makes quick work of the ice cream scoop topping. The melted ice cream together with the warm toast makes for a deliciously mouth-watering pairing. HIBI COFFEE’s French toast is quite sizeable, so it’s an excellent option for breakfast or a meal in between meals.

This coffee shop is at the back of a tiny little alleyway, making it a little hard to find; however, that just adds to the overall mystique of it and feeling of “being in the know.” The fresh, daily roasted beans give the coffee beautifully clear flavors and make them palatable for even a non-coffee drinker like myself. In fact, the coffee here was so good that I brought some of their drip packs and gave them to my family. The Takasegawa and Kamogawa rivers are close by, so HIBI's a great place to grab a takeaway coffee and take a stroll by the river. However, it's always so chilled out inside that it’s the perfect place to relax with a book or come when you have things to think over. Personally, this is why I always choose to sit down and have my coffee there. The window side seats are especially good places to sit back and relax and are my recommendation as they get the most sun.

The selective freshness of HIBI 'COFFEE's beans makes their coffee deliciously well-rounded and the perfect option for those wanting to enjoy the deep flavors of the beans. I also highly suggest anyone who has made their way here to give the food a try as well! The combination of the French toast with the coffee was especially amazing. I was so enraptured with the pairing's beautiful flavors that I ended up zoning out a little too much and was sternly reminded by Yumemi that; "We're still at work, Shin!" Next time, I think 'I'm going to come here in the morning of one of my days off and chill out to my heart's desire.
