In Shijo Karasuma, surrounded by office buildings, you can find the restaurant Hyoto Kyoto. This shabu shabu restaurant is famous in Kyoto, and it is easily recognized from its modern exterior and the blue noren curtains that hang at its entrance. Hyoto puts a lot of effort into their service, which they do in the spirit of “omotenashi,” utmost hospitality from the heart. They use only the best quality meat, omi beef wagyu and “biyuuton” pork, in their delicious dishes, and the elegant modern interior, plus the hospitality of the staff, all make you feel welcome and appreciated when you visit this restaurant, even feel happy and satisfied. In this course you have seven different dishes, and not all of them shabu shabu, but they are served as a course dinner like in kaiseki. The course starts with the vivid hassun platter, and then continues with sashimi and sushi and other delicious things. The beef is omi beef, one of the three most famous wagyu brands in Japan. The best time to eat the beef is when it is still a bit red. I heartily recommend this shabu shabu course; once you eat this delicious shabu shabu you won’t forget it.

This shabu shabu course with A5 level omi beef wagyu is more than enough for most people. Compared to the sirloin cuts the beef is not as fatty, so it feels like you could eat really a lot of it. This course has sashimi, shabu shabu, and other dishes, and altogether there are six dishes, so the amount should be perfect especially for women.

On this bamboo bottle, you can see the logo of Hyoto, so when you go have shabu shabu remember to also have some sake. This sake is handmade by sake artisans, and the bottle is made of bamboo from Kyoto, and the sake cup made of bamboo also has a nice smell of bamboo. It is a good idea to have an elegant cup of bamboo sake with your shabu shabu.
How to Order

They have an English menu with even an explanation of how to eat shabu shabu. 


This beautiful hassun platter can only be seen if you order the 13,000 yen course. The cherry tree branch by the cute earthenware ducks and the petals are all real. This exceptional show of Japanese beauty is worth a look, but the taste is also worth it. 


Lastly, you get fresh udon made in Kyoto. The waitress will help you put the udon noodles into the pot where you just cooked your wagyu beef and Kyo-yasai vegetables. 


Pork shabu shabu is also popular, and with it, you get green onion and yuzu pepper, but the yuzu pepper goes also well with the udon noodles. I hope those who like spicy food will try it!

The shabu shabu with omi beef wagyu was just perfect! The beef was fatty, but it didn’t leave a fatty aftertaste, it just melted in your mouth. Also the dishes they have on their a la carte menu besides the shabu shabu were all great, and I ate a lot… the staff at the restaurant were really great, and I want to recommend this restaurant.

Right when you enter the restaurant, you can smell the sweet smell of dashi soup stock and see the traditional Japanese interior. At this time a woman wearing a kimono will come and lead you inside, making you feel like you were an important guest like a diplomat. They use highest quality wagyu beef, A5 rank, and after boiling this in the shabu shabu way you get to eat beef that is fatty but just melts in your mouth, and leaves a sweet aftertaste, and makes you feel glad you are alive. Just looking at the exterior of the restaurant already tells you that this high-class restaurant offers great food, but the shabu shabu I had was even better than I dared to expect! Now I can easily understand why this restaurant is said to be one of the shabu shabu restaurants that represent Kyoto. Remember to keep this restaurant in mind if you have some special events coming up.
