Carefully watch the soybeans boil
One of the first steps in making tofu is to mix soybean extract with water for 12 or so minutes. As it will take less than 5 minutes to boil, please watch the heat so it doesn’t boil over. If you have a friend joining you in this workshop, one person can maintain the heat while the other person stirs.
Oboro Tofu (tofu curds)
Oboro Tofu is a kind of tofu, though it does not look like ordinary tofu, and has become popular in Japan s it’s fresher than the tofu sold in supermarkets. It’s made by boiling the tofu with a lid on for 15 minutes or so. Please be patient when making it if you want delicious Oboro Tofu.
Take out the tofu from the frame
After putting the Oboro Tofu in a special square frame, you need to then place it in the water slowly, so it keeps its square shape. The water is extremely cold so your hands might go numb but this is the final task in making your tofu.
Enjoy your tofu
You can eat your tofu hot or cold. If you decide to try it both ways, a staff member will be pleased to serve both. Original soy sauce will be served with the tofu, which brings out the strong flavors of the beans. Eat with chopped Japanese leeks and sliced bonito flakes to make it even more delicious.
