Ramen noodles with a harmony of Seabura pork and dried sardines
Seaburano Kami is a ramen restaurant located a five-minute walk from Omiya Station on the Hankyu Kyoto Line. The specialty is ramen with a dried sardines-based broth and “seabura”, pork backfat. This is a Kyoto-style version of ramen commonly eaten in Niigata Prefecture. The name of the restaurant literally means “god of back fat”. From its name, one might imagine a very fatty, rich ramen. But don’t be fooled by its name. Back fat is actually less than it looks. There is little fat or texture as one might expect, and all one tastes is the richness and umami of the broth. This is only apparent when you sip the soup. The carefully selected backfat dried sardines soba, arranged to suit the tastes of Kyoto people, can only be eaten here.

Seaburano Kami’s famous back fat dried sardines ramen. The soup, a blend of four kinds of sardines, has a slightly bitter taste that enhances the umami and richness of the pork back fat. The taste is very refined. You can order thick or medium-thick ramen noodles according to your preference, but the restaurant's recommendation is thick noodles with a plump texture. There are also two types of roasted pork fillets to choose from, one lightly cooked and the other cooked thoroughly. You can also add garlic or other condiments to change the flavor to your liking.

The Ultimate Back Fat Rice

The “Ultimate Back Fat Rice” is topped with a generous amount of back fat, roasted pork fillet, green onions, chopped nori seaweed, and egg yolk. These are served mixed with a spoon. The roasted pork fillet comes in two varieties, slightly cooked and well-done, and is rich but not greasy. The special feature is the egg yolk topped in the center. It is made from a special variety and is very rich. This may be a good opportunity to try raw eggs.
